Because I don't use preservatives in my cookies, they are best eaten within a few days of baking. Ask me about those that have a longer shelf life.

And I love chocolate too!  So a buttery, chocolate cookie studded with peanut butter chunks sounds uber-delish!  It's like a peanut butter cup in cookie form.  How can I resist?!?!

The Oh-So-Magical Power of the Strawberry

By and far, these Strawberry Gems have been my most requested cookie.  Something magical happens when you bite into these cookies.  From the sweet, luscious strawberry on top to the nuts and soft sugar cookie loaded with even more strawberry flavor.  Dusted with powdered sugar, the strawberry center seems to sparkle.  You can't eat just one.  No really, I've been told that several times.

Wow, look at that juicy strawberry!
I baked this morning, and since it's Mother's Day weekend, I decorated all the boxes for the occasion.  I have lots of cardstock and ribbon from my card-making days, so I spent some time making the boxes gift-worthy.

Raspberry White Chocolate Bars

One of my husband's favorite, Raspberry White Chocolate Bars are something I created at the request of (yet again) a ROTC cadet.

Raspberry bars are quite popular.  I research several recipes before taking pieces of many and creating my current bars.  One thing I knew was that I wanted to incorporate real fresh raspberries into the filling.  Most recipes were just raspberry jam between two cookie layers.  I wanted a cookie sturdy cookie base and then a crunchy, nutty topping.  And of course, I needed to throw some white chocolate in there.  After a few attempts, I opted for mixing in the topping rather than a drizzled icing.  Three tries later...success!  Crisp buttery cookie, luscious raspberry pieces in a sweet filling, crunchy topping with delicious bits of white chocolate.

Just baked this morning.  Waiting for it to cool so I can cut into samples.
I'm offering these wonderful cookie bars as part of my Mother's Day menu.  Each box of a dozen bars will be decorated with ribbon for a lovely gift presentation.

Sample of decoration, colors may vary

$10 for one dozen Raspberry White Chocolate Bars.

A Gift for Mom

Our mothers are leaders of our support group.  They are our personal cheerleaders, counselors, and most times, our best friend.  One day a year, we let them know how much they mean to us.

This year, why not give them a heartfelt and delicious gift?  I've taken my favorite special occasion cookies and wrapped them in pretty boxes, the extra touch to make Mom feel extra special.

First up are my Raspberry White Chocolate Bars.  Fresh raspberries, real white chocolate and chewy oats make up these buttery cookie bars.

Next, my chocolate-y Red Velvet Cookies.  Soft cake cookies topped with cream cheese frosting.

Mom likes chocolate?  How about some Rocky Road Brownies?  Rich chocolate, almonds and marshmallows.

(I don't have a current picture, so I borrowed one from the internet)

And finally, my famous Strawberry Gems (formerly called Flips).  Strawberry cookies topped with a luscious strawberry.

Memories of Hawai'i, and so on....

My husband took me to Hawai'i after his deployment.  We relaxed and enjoyed the beauty of the island of Kauai.  There, we ate our fair share of fresh fishes, coffee, cane sugar, chocolate, pineapple, coconut and macadamia nuts.  It was pure bliss.

Macadamia nuts are buttery and meaty.  They pair so well with chewy, sweet coconut and everything benefits from pure vanilla.  I took these flavors and created my Island cookie.  A brown sugar cookie base holds the nuts, coconut and vanilla chips.  It always brings back my Hawai'i memories.  You should experience the island life too.  $8 for one dozen.

In remembering this buttery nut, I also am partial to buttery shortbread cookies.  I decided to toss some Russian Tea Cakes in the oven too.  Also known as Mexican Wedding Cookies, these balls of yummy-ness contain chopped pecans and are rolled in powdered sugar.  You can't eat just one.  And they go so well with tea or coffee!  Grab some for your morning coffee.  $4 for 6 pieces.

I'll be in the DelRay Tower concierge lobby from 6-7pm tonight.  See you there!

It's a Dream

Chocolate Air Power Dream, that is!

When my husband taught Air Force ROTC at Embry-Riddle Aeronautical University at Daytona Beach, Florida, I used to play mom to the 300+ cadets.  That included baking them cookies every week.  They would devour all the goodies I brought in.  They always asked me for these morsels of comfort food to remind them of home.

I was asked to help with one of their many fundraisers.  So I created a new cookie, and they held a contest to name this cookie.  There were many entries, but the winner was Chocolate Air Power Dreams.  After that, I baked this cookie for them quite often, and they always disappeared within a couple of hours.

Nowadays, when I bake some Dreams, I always think fondly of all my 'kids' and miss them terribly.  By now, most are promising Lieutenants in the U.S. Air Force.

Happy munching!

For my milk chocolate fans...

Milk Chocolate or Dark Chocolate?  It's a big debate on which is better.  I usually use darker chocolates in my brownies, but I have a sweet recipe for my milk chocolate lovers.  I make it all with milk chocolate from the melted chocolate I start with, to the milk chocolate chips that are dispersed throughout.  One day, I'll do a side-by-side taste-test to tally which version really is the most favorite.

Delicious aromas in the kitchen

A good friend is leaving for a new job, so I baked up some of her favorite cookies, my Extreme Peanut Butter Brownies.  So yum, layers of peanut butter goodness.  I will miss her, but I hope she comes back to order these luscious treats.

Meanwhile, I was craving some cinnamon, so I popped some Snickerdoodles in the oven too.

Mmm, happy kitchen.
