Because I don't use preservatives in my cookies, they are best eaten within a few days of baking. Ask me about those that have a longer shelf life.

Pumpkin Pie Bars

I love pumpkin pie.  I'm not crazy about finding a plate and a fork, cutting a wedge, and having to do dishes afterward.  So I make them into cookie bars!  A nice thick oatmeal based crust and creamy pumpkin goodness, topped with brown sugar and pecans.  A can of whipped cream would be handy!

About 30 seconds after I took this picture, my husband devoured the bars.  This is was I came back to:
At least he didn't lick the plate...yet.
